Extra Toppings (per pizza)

Method

Applying Extra Toppings

1

Prepare topping quantities

For the chosen pizza size, decide which extra toppings you want and scale quantities if adding to a larger or smaller pizza. The listed quantities are approximate single-pizza portions for a Medium pizza; adjust up for Large/Extra Large and down for Mini/Small. Gather all chosen toppings on a clean work surface or small bowls for easy access.

2

Pre-cook proteins and wet ingredients

If using raw meats (for example bulk Italian sausage), cook and crumble thoroughly until no pink remains, drain excess fat, and cool slightly before adding to the pizza. For pre-cooked proteins like pepperoni or precooked sausage, no extra prep is needed aside from portioning.

3

Distribute sauce and cheese baseline

Before adding extras, spread your pizza sauce evenly over the dough, leaving a 1/2"–1" crust border. Sprinkle a baseline layer of shredded mozzarella (not the extra portion) to create a binder for toppings.

4

Add extra cheese

Evenly scatter the extra shredded mozzarella over the sauced pizza so it melts on top of or beneath other toppings. Use approximately the listed 0.25 cups for a Medium pizza; increase for larger sizes.

5

Layer vegetables and fruits

Distribute sliced mushrooms, red onions, green peppers, black olives, pineapple chunks, and jalapeño slices evenly so the pizza remains balanced. Place moisture-prone items like mushrooms and pineapple in small clusters rather than one concentrated mound to promote even cooking.

6

Add cooked meats and delicate cheeses

Scatter cooked and portioned Italian sausage, pepperoni slices, and crumbled feta or goat cheese across the pizza. Place delicate cheeses in small dollops to prevent over-melting and sliding off during bake.

7

Finish with herbs, oil and spices

Brush the crust lightly with garlic oil (about 1 tablespoon for a Medium) and sprinkle dried oregano/Italian seasoning and crushed red pepper flakes evenly over the pie for aroma and flavor.

8

Bake and monitor

Bake the pizza according to the base pizza recipe's temperature and time. Extra toppings, especially wet items like mushrooms or pineapple, may extend time needed for proper browning—monitor during the last 3–5 minutes and rotate if necessary. Remove when crust is golden and cheese is bubbly.

9

Finish with fresh herbs

After removing from the oven, immediately scatter fresh basil leaves over the hot pizza so they wilt slightly but retain freshness. Let the pizza rest 2–3 minutes before slicing to allow toppings to settle.

10

Portioning guidance & pricing note

Slice and serve according to your pizza's standard portioning. Charge extra topping fee according to pizza size: Mini Moose $1.09, Small $1.49, Medium $2.79, Large $3.49, Extra Large $4.99. If multiple extra toppings are applied, price them cumulatively per topping or according to your store policy.
