Prepare Bread & Spread

Trim crusts from all bread slices with a sharp knife so you have neat rectangles. Lay out 12 slices as bottoms and 12 as tops.

Evenly spread about 1/2 tbs softened butter on one side of each of the 12 bottom slices. On the 12 top slices spread about 1/2 tbs mayonnaise (or softened butter) each. The butter on the bottom keeps bread pliable; the mayo on top adds flavor and helps seal.

Jamón y Queso

On 2 bottom slices, spread 1 tbs mayonnaise each if you want extra moisture. Layer 1 jamón slice (folded as needed) and 1 cheese slice on each. Top with a buttered top slice, press gently and trim to neat edges. Repeat to make 2 sandwiches (4 mini halves if cutting).

Prosciutto & Tomato

Slice tomato very thin (2–3 thin slices per sandwich). Lightly salt the tomato slices and blot with paper towel to remove excess moisture. On 1 bottom slice spread 1 tbs soft cheese or mayo if desired, place 1 prosciutto slice, then tomato slices and 1–2 basil leaves. Top with a buttered top slice and press gently. Make 1–2 sandwiches.

Corn & Cheese

In a small bowl, combine drained corn, 4 tbs softened cream cheese, shredded cheese, and a pinch of black pepper. Mix until evenly combined. Spread about 1.5 tbs of the mixture onto one bottom slice, top with buttered top slice, press and make 1–2 sandwiches depending on filling thickness.

Asparagus & Cheese

If asparagus not blanched: trim, blanch in boiling water 1–2 minutes until bright green, plunge into ice water, drain and pat dry. Spread 1 tbs cream cheese mixed with lemon zest on a bottom slice, lay 3 blanched asparagus spears across, top with buttered top slice, press. Make 2 sandwiches (3 spears each).

Hearts of Palm & Cheese

Spread 1 tbs cream cheese or ricotta mixed with chopped chives onto a bottom slice. Arrange 2–3 thin hearts-of-palm slices on top, cover with a buttered top slice, press gently. Make 1–2 sandwiches.

Artichoke & Cheese

Finely chop the drained artichoke hearts and mix with 3 tbs cream cheese and 2 tbs grated parmesan. Taste and adjust salt. Spread about 1.5 tbs of the mixture onto a bottom slice, top with buttered top slice and press. Make 1–2 sandwiches.

Turkey & Red Pepper

Spread 1 tbs goat cheese or cream cheese on a bottom slice. Layer 1–2 turkey slices (folded) and 2 roasted red pepper strips. Top with buttered top slice and press. Make 2 sandwiches.

Assemble, Press & Cut

Once all varieties are assembled, place each sandwich under a heavy board or press for 10–15 minutes to compact (this helps slicing cleanly).

Using a sharp serrated or chef’s knife, trim any uneven edges for a clean rectangle if desired. Cut each sandwich into 3 equal mini portions (or into 4 small fingers), depending on desired final size. Wipe the knife between cuts for clean edges.

If serving immediately, garnish with a small parsley sprig or microgreen on each mini sandwich. If making ahead, wrap individually in plastic wrap and refrigerate up to 6 hours to keep shape (avoid longer to prevent soggy bread).
