Puff Pastry
Prepare and bake the sheets
Preheat the oven to 200°C (390°F). Lightly flour a clean work surface and roll each puff pastry sheet briefly to even thickness (about 2–3 mm). Trim each sheet to a neat rectangle (approx. 20 x 30 cm) if needed. Place the pastry sheets on a baking tray lined with parchment paper. Prick the entire surface of each sheet evenly with a fork to prevent excessive puffing. Optionally place a second sheet of parchment and another baking tray on top to weigh them down (this produces flatter layers).
Bake the sheets for 12–18 minutes, rotating halfway, until golden and crisp. If using weight on top, check after 12 minutes. Remove from oven and allow to cool on a rack. When cool, using a serrated knife or long spatula, cut each sheet into three even strips lengthwise (or into desired number of layers) so you have 6 layers total (2 sheets × 3 strips = 6). Set aside.
Pastry Cream (Crema Pastelera)
Infuse milk
Pour the milk into a medium saucepan. Add the vanilla bean scrapings and pod (or 1 tsp vanilla extract) and bring to a gentle simmer over medium heat. Remove from heat just as it begins to steam and let sit for 5 minutes to infuse if using a bean. Remove the vanilla pod and discard (if used).
Whisk eggs and starch
While the milk rests, in a bowl whisk together the egg yolks and granulated sugar until slightly paler (about 1–2 minutes). Whisk in the cornstarch until smooth and no lumps remain.
Temper and cook
Very slowly add about 100 ml of the hot milk into the egg mixture, whisking constantly to temper the yolks. Then pour the tempered mixture back into the remaining milk in the saucepan, whisking continuously. Return to medium-low heat and cook, whisking constantly, until the mixture thickens and comes to a gentle boil (about 3–5 minutes). Once thick and glossy, remove from heat.
Finish the cream
Whisk in the unsalted butter, a little at a time, until fully incorporated and smooth. For best texture, strain the pastry cream through a fine-mesh sieve into a clean bowl to remove any bits. Cover the surface with plastic wrap directly on the cream to prevent a skin from forming. Chill in the refrigerator for at least 2 hours until fully cold and set.
Assembly & Finish
Prepare jam glaze (optional)
If using apricot jam for shine, warm the jam with 1 tablespoon cold water in a small saucepan or microwave until smooth and fluid. Strain if necessary. Set aside to cool slightly.
Assemble the Mil Hojas
Place one puff pastry strip on a serving board or tray. Pipe or spread an even layer (about 1–1.5 cm thick) of chilled pastry cream over the pastry. Smooth with an offset spatula. Top with a second pastry strip and repeat layering cream. Continue until you have used 3 pastry strips (for a traditional 3-layer slice) or stack to the desired height; finish with a top pastry layer (no cream on top). For taller cakes, use more layers—ensure even distribution of cream so the cake is stable.
Slice and serve
Using a sharp serrated knife, slice the Mil Hojas into portions (clean the knife between cuts for neat edges). Serve chilled or at cool room temperature. Keeps refrigerated in an airtight container for up to 2 days; the pastry will soften over time.
