Prepare glass

Chill a Collins or hurricane glass by filling it with ice water while you prepare the drink; set aside.

Combine ingredients

Add the white rum, fresh pineapple juice, coconut cream, fresh lime juice and simple syrup to a cocktail shaker. Add the crushed ice to the shaker — enough to fill filling roughly three-quarters of the shaker.

Shake hard

Cap the shaker and shake vigorously for 10–15 seconds. The goal is to thoroughly chill, dilute slightly, and emulsify the coconut cream with the juices so the texture is smooth and slightly foamy.

Prepare serving glass

Dump the ice water out of the chilled glass. Fill the glass about two-thirds with fresh crushed ice.

Strain and serve

Double-strain the shaken mixture into the prepared glass over the crushed ice using a Hawthorne and fine mesh strainer if available. This removes any large ice shards and fruit particulates for a smoother texture.

Garnish

Garnish with a pineapple wedge and a mint sprig. Optionally grate a light dusting of nutmeg over the top (about a pinch) for aromatic lift.

Enjoy

Serve immediately with a straw. Stir once or twice before sipping to integrate any settled cream.
