Brew coffee

Make strong coffee

Brew 1 cup of very strong coffee (use about double the usual coffee grounds to water ratio). If using instant espresso powder for extra strength, dissolve 1/4 tsp into the hot coffee and stir until dissolved.

Prepare milk

Heat and froth milk

Pour 1 cup milk into a small saucepan. Add 1/2 tsp unsalted butter if using. Warm over medium-low heat until steaming (do not boil), about 3–4 minutes. If you have a milk frother or steam wand, froth until you get small, silky microfoam (about 20–30 seconds). If you don't have a frother, vigorously whisk, shake in a tightly sealed jar for 30–60 seconds, or use an immersion blender for 10–15 seconds to create foam.

Assemble

Combine coffee and milk

Pour the hot brewed coffee into a warmed 12-oz mug. Stir in 1 tsp sugar or sweetener to taste until dissolved. Gently pour the steamed milk over the coffee, holding back the foam with a spoon; finish by spooning the foam on top (classic ratio is roughly 1:1 coffee to milk).

Garnish and serve

Lightly dust the foam with a pinch (about 1/8 tsp) of ground cinnamon or cocoa powder if desired. Serve immediately.
