Oyster Trio — shared components
Oysters Rockefeller (6 oysters)
Oysters Chesapeake (6 oysters)
Oysters Moscow (6 oysters) — vodka mignonette
Method
Prepare a serving platter by spreading crushed ice in an even layer to create a cold bed for the oysters. Place six oysters in three groups (6 Rockefeller, 6 Chesapeake, 6 Moscow) on the ice. Keep lemon wedges and crackers nearby. Preheat the oven to 450°F (230°C) for the Rockefeller and Chesapeake preparations.
Shuck oysters if not already shucked: hold oyster with towel, insert shucking knife at hinge, twist to pop, run blade under the top shell to free, then cut the muscle under the oyster to release it onto the half shell. Reserve oyster liquor in the shell. Work over a bowl to collect juices if desired.
Oysters Rockefeller (6 oysters)
Make the Rockefeller topping
In a small skillet over medium heat, melt the unsalted butter. Add the minced shallot and sauté 1–2 minutes until translucent but not browned. Add the minced garlic and cook 30 seconds until fragrant.
Add the chopped spinach and cook, stirring, 2–3 minutes until wilted and most of the moisture has evaporated. Stir in the chopped parsley and chives, then pour in the white wine and Worcestershire sauce. Cook 1 minute to combine and reduce slightly.
Remove skillet from heat. Stir in the dry breadcrumbs, grated Parmesan, lemon zest, salt, and black pepper. Taste and adjust seasoning; the mixture should be savory and compact enough to mound onto oysters.
Spoon about 1 to 1 1/2 tablespoons of the spinach mixture onto each of the 6 Rockefeller oysters, mounding to cover the oyster. Sprinkle a light dusting (about 1/2 tsp total) of additional breadcrumbs or Parmesan over the tops for a golden finish.
Transfer the oysters on a baking sheet (set on top of the ice bed just before serving if desired) to the preheated oven and bake 8–10 minutes until the topping is bubbling and lightly browned. Remove carefully and place back on the chilled platter of ice.
Oysters Chesapeake (6 oysters)
Remove from heat and stir in the picked crab meat, breadcrumbs, Old Bay seasoning, chopped parsley, lemon juice, salt, and pepper. Gently fold to combine, being careful not to break up the lump crab too much. The mixture should hold together slightly when pressed.
Spoon about 1 to 1 1/2 tablespoons of the crab mixture onto each of the 6 Chesapeake oysters, covering the oyster. Lightly press so the topping adheres. Optionally sprinkle a pinch more breadcrumbs on top for texture.
Place the topped oysters on a baking sheet and bake in the 450°F (230°C) oven 8–10 minutes, until the topping is set and starts to color lightly. Remove and transfer to the chilled serving platter.
Oysters Moscow (6 oysters) — vodka-dill mignonette
Make the vodka mignonette
In a small bowl combine the red wine vinegar, vodka, minced shallot, finely diced cucumber, chopped dill, sugar, salt, and black pepper. Stir until the sugar and salt have dissolved. Let the mignonette rest at room temperature for 10–15 minutes to allow flavors to meld; chill briefly if you prefer it cold.
Spoon about 1/2 to 1 teaspoon of the vodka mignonette onto each of the 6 Moscow oysters just before serving (do not bake these oysters). The mignonette will lightly perfume the oyster with acidity, cucumber crunch and vodka brightness.
Finish & serve
Suggested tasting sequence: start with the chilled Moscow oysters to cleanse the palate, then the Chesapeake (crab-topped), and finish with the rich, warm Rockefeller.
