Method
Cook and Prepare Lobster
Bring a large pot with 6 cups cold water to a rolling boil. Add a generous pinch of salt. Plunge the live lobsters headfirst into the pot. Cover and boil for 8–10 minutes until shells are bright red and meat is opaque. Remove lobsters and transfer to an ice bath to stop cooking.
When cool enough to handle, twist off the tails and claws. Using kitchen shears or a lobster cracker, carefully extract tail and claw meat. Reserve meat in the refrigerator. Keep shells (bodies, claws, and knuckles) for the stock.
Remove any tomalley (liver) if desired and reserve a small spoonful to flavor the bisque (optional). Chop reserved lobster meat into bite-sized pieces, set aside (about 1 cup).
Make Lobster Stock
Stir in 2 tbs tomato paste and cook 2 minutes to caramelize slightly. Pour in 3 tbs white wine to deglaze, scraping up browned bits. Let wine reduce by half, about 1–2 minutes.
Add 6 cups fish or shellfish stock (or low-sodium chicken stock if needed), 1 bay leaf, 2 thyme sprigs, and 8 peppercorns. Bring to a gentle simmer and cook uncovered for 30–40 minutes to extract flavor from shells.
Strain the stock through a fine-mesh sieve into a clean pot or bowl, pressing on solids to extract liquid. Discard solids. Taste and season lightly with 1 tsp salt. Keep stock warm.
Create Bisque Base
Sprinkle 2 tbs all-purpose flour over the softened vegetables and cook, stirring constantly, 2 minutes to form a light roux (do not brown).
Stir in 1 cup peeled, seeded, and finely chopped tomato (or 1 cup canned crushed tomatoes) and 1 tsp paprika and 1/2 tsp cayenne pepper. Cook 2 minutes to blend flavors.
Slowly whisk in the strained lobster stock until smooth. Bring mixture to a gentle simmer and cook 10–12 minutes to thicken and meld flavors.
Use an immersion blender (or transfer in batches to a blender) to puree the bisque until velvety and smooth. If using a blender, return to pot and reheat gently.
Finish and Enrich
Off the heat, stir in 3 tbs brandy or Cognac. Return to low heat and add 1 cup heavy cream and 1 tbs dry sherry (optional). Warm gently—do not boil—until heated through and slightly thickened, about 3–5 minutes.
Temper the liaison: whisk 2 tbs cold heavy cream into the hot bisque, then gradually add a few ladlefuls of hot soup into the cream while whisking. Return the tempered cream to the pot and stir gently to incorporate. This step helps prevent curdling.
Stir in 2 tbs unsalted butter, 1 tbs lemon juice, and the reserved chopped lobster meat. Simmer gently 2–3 minutes just to warm the lobster meat. Taste and adjust seasoning with salt, paprika or cayenne to preference.
Finish & Serve
Ladle the bisque into warmed bowls.
Garnish each bowl with a sprinkle of finely chopped fresh chives and an extra drizzle of cream or a small pat of butter if desired.
Serve immediately with toasted baguette slices or buttery croutons.
