Spread peanut butter
Using a knife, scoop approximately 2 tablespoons of peanut butter and spread it in an even layer over one slice of bread, covering the surface edge-to-edge to ensure every bite has peanut butter.
Spread jam
Using a clean knife (or the back of the peanut-butter-covered knife wiped clean), spread approximately 2 tablespoons of jam or jelly on the other slice of bread in an even layer.
Add optional fillings
If using banana, arrange the banana slices in a single layer on top of the peanut butter. If using honey, drizzle about 1 teaspoon over the banana or peanut butter. Sprinkle a small pinch of sea salt over the peanut butter if desired to enhance flavor.
Assemble sandwich
Place the jam-covered slice on top of the peanut-butter-covered slice, jam side down, aligning the edges. Press gently to adhere.
Toast or serve
For a cold sandwich, cut diagonally or down the middle and serve immediately. To toast: heat a nonstick skillet over medium heat, place the assembled buttered-sides-out sandwich in the skillet, and cook 2–3 minutes per side until golden brown and warmed through. Alternatively, use a sandwich press or panini maker following manufacturer instructions.
Cleanup & storage
Transfer leftovers (if any) to an airtight container and refrigerate up to 24 hours if you used fresh fruit. For best texture, store uncut if planning to toast later. Wash knives, plate, and utensils with warm soapy water.
