Prepare lettuce

Remove outer leaves and core the romaine. Rinse thoroughly under cold water, then spin or pat dry until almost completely dry. Tear or chop into 1 to 1½-inch pieces and place in a large chilled salad bowl.

Add cheese and croutons

Reserve 1 tablespoon of Parmesan for finishing. Add the remaining 2 tablespoons of Parmesan and the croutons to the bowl with the lettuce. If using grilled chicken, arrange sliced chicken on top or toss in when dressing is added.

Dressing

Mince anchovies and garlic

On a cutting board, finely mince the anchovy fillets and the garlic clove together until they form a coarse paste. Alternatively, mash them with the side of a chef's knife.

Emulsify base

In a medium bowl, whisk together the anchovy-garlic paste, mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce and white wine vinegar until combined and slightly thickened.

Incorporate oil

Very slowly drizzle in the olive oil while whisking vigorously to create a smooth, slightly thickened emulsion. If the dressing is too thick, whisk in up to 1 teaspoon of cold water to loosen.

Finish dressing

Stir in the grated Pecorino/Parmesan, salt, and freshly ground black pepper. Taste and adjust: add up to 1 teaspoon more lemon juice for brightness or a pinch more salt if needed.

Optional blender method

For a silkier dressing, combine the anchovies, garlic, mayonnaise, lemon juice, mustard, Worcestershire and vinegar in a small blender or food processor. With the motor running, slowly pour in the olive oil until emulsified, then season and blend briefly with the cheese.

Assembly & finishing

Add 3 to 4 tablespoons of dressing to the bowl with the lettuce, Parmesan and croutons. Toss gently but thoroughly to coat — add more dressing, 1 tablespoon at a time, until the leaves are evenly coated but not soggy.

Transfer to individual plates or serve from the bowl. Sprinkle the reserved 1 tablespoon Parmesan over the top and finish with a crack of black pepper. Serve immediately with lemon wedges on the side for those who want extra acidity.

If using grilled chicken, place sliced chicken on top of each portion before the final sprinkle of cheese, or toss with the dressed greens to combine.
