Corn dog batter

Mix dry

In a large bowl whisk together 1 cup yellow cornmeal, 1 cup all-purpose flour, 2 tablespoons granulated sugar, 2 teaspoons baking powder and 1 teaspoon kosher salt until evenly combined.

Combine wet

In a separate bowl whisk 1 cup buttermilk, 1 large egg, 2 tablespoons melted unsalted butter and 1 teaspoon yellow mustard until smooth.

Pour the wet ingredients into the dry ingredients and stir just until combined. The batter should be thick enough to coat a spoon — if it seems too thick, add up to 2 tablespoons additional buttermilk; if too thin, add 1–2 tablespoons flour. Let the batter rest 10 minutes at room temperature; this hydrates the cornmeal and helps texture.

Hot dogs & assembly

Pat 8 hot dogs dry with paper towels. Insert a wooden skewer about two-thirds of the way into each hot dog, leaving a handle of about 3–4 inches. Lightly dust each hot dog with 1 tablespoon all-purpose flour—this helps the batter adhere. Shake off excess flour.

If you want a thicker, crunchier crust: spread 1 cup panko breadcrumbs mixed with 2 teaspoons cornstarch on a shallow plate. After dipping the floured hot dog in batter (next section), immediately roll it in the panko to coat before frying. Proceed with batter-dipping instructions below.

Frying

Pour 6 cups of neutral oil into a deep, heavy pot or Dutch oven to a depth of about 2–3 inches. Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of batter into the oil — it should sizzle and rise steadily.

While oil heats, transfer the batter to a tall narrow container (a large measuring cup or jar works well) — this makes dipping easier and creates a more even coat. Hold one floured hot dog by the skewer and dip it straight down into the batter until covered to just below the stick. Lift and let excess drip back into the container for 5–8 seconds. If using panko, immediately roll the battered hot dog on the panko plate to coat evenly.

Carefully lower the battered corndog into the hot oil, holding the skewer (or set on a slotted spoon to gently release). Fry 3–4 corndogs at a time without crowding, 3–4 minutes each, turning once with tongs so they brown evenly. Aim for deep golden brown crust and internal hot dog temperature hot throughout. If your oil temperature falls below 325°F, momentarily increase heat; if it goes above 375°F, reduce it.

Use a slotted spoon or tongs to remove corndogs to a wire rack set over a sheet pan to drain for 2–3 minutes. Do not stack or they will steam and lose crispness. Keep cooked corndogs warm in a 200°F oven while you fry remaining batches.

Comeback sauce

While corndogs fry, make the Comeback sauce. In a bowl whisk together 1 cup mayo, 2 tablespoons ketchup, 2 teaspoons finely minced pickled jalapeño (or 1 teaspoon pickled jalapeño juice), 1 teaspoon hot sauce, 1 teaspoon smoked paprika, 1 teaspoon Worcestershire sauce, 1 teaspoon apple cider vinegar, 1 teaspoon brown sugar, 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper until smooth and well combined.

Taste and adjust: add more hot sauce for heat, more vinegar for tang, or a pinch more sugar to balance. Refrigerate at least 15 minutes to let flavors meld; sauce will keep refrigerated up to 1 week in a sealed container.

Finish & serve
