Select and rinse
Choose 2 large, firm oranges with bright skin and no soft spots. Rinse each orange under cool running water (use approximately 1/4 cup of water) and rub gently to remove surface residue. Pat dry with a clean towel.

Peel or slice
Decide how you want to serve the orange: Option A — Peel into segments: Using your fingers or a small paring knife, score the skin from top to bottom and remove the peel and pith, then separate into segments. Option B — Slices or wheels: Place the orange on a cutting board and slice crosswise into 1/4–1/2 inch (6–12 mm) rounds. Trim away any seeds and white pith if desired.

Serve simply
Arrange the orange segments or slices on a plate. Garnish with 3 mint leaves per orange for color and aroma. Serve immediately at room temperature or chilled.

In a small bowl, whisk together 1 tablespoon extra virgin olive oil, 1 teaspoon honey (or maple syrup), and 1/2 tablespoon fresh lemon juice until emulsified. Season with 1/8 teaspoon sea salt and a pinch (about 1/16 teaspoon) of freshly ground black pepper.

Place the peeled and segmented or sliced oranges on a serving plate. Drizzle the dressing evenly over the oranges. Sprinkle 2 tablespoons of finely chopped pistachios or sliced almonds over the top for texture.

Garnish with mint leaves. Taste and adjust seasoning if necessary (add a tiny pinch of salt or a drizzle of honey). Serve immediately as a light starter, side, or healthy dessert.
