Espresso & Water

Method

Espresso & Water

  1. 1

    Prepare espresso machine

Warm and purge the espresso machine group head and portafilter. Preheat a small espresso cup or shot glass by rinsing it with hot water, then discard the rinse water.

  2. 2

    Dose and tamp

Weigh 18 g of finely ground dark-roast espresso (espresso grind, slightly finer than standard drip). Distribute evenly in a 58 mm (or appropriate) portafilter basket and tamp with about 30 pounds of pressure to create a level puck.

  3. 3

    Pull double ristretto

Brew a double ristretto by locking the portafilter in and starting extraction. Aim for ~18–20 seconds extraction time and yield about 30 ml of espresso (a concentrated double ristretto). Stop the shot when you reach ~30 ml. The result should be thick, syrupy, and intense.

  4. 4

    Heat hot water

While pulling the shot, heat 120 ml of water to 85–90°C (185–194°F). If using a hot-water tap on a machine, dispense into a kettle or preheated serving glass to avoid excessive cooling.

Assembly & Service

  1. 5

    Build the Brass Knuckle Americano

Place the double ristretto in your serving cup. Pour the 120 ml of hot water gently over the back of a spoon or down the side of the cup to preserve crema and create layered interplay between espresso and water. This yields a strong, concentrated Americano — the 'Brass Knuckle' effect.

  2. 6

    Optional iced variation

If serving iced, fill a rocks glass with 6 ice cubes. Pull the double ristretto directly into a small pitcher, then pour the hot water over the ice to rapidly cool the drink. Stir once to integrate and top with a little extra hot water if the temperature allows.

  3. 7

    Garnish & serve

Express an orange zest over the cup to release oils and drop the twist in as optional garnish. Serve immediately while hot (or chilled if iced).
