Prepare the dough
In a large bowl, whisk warm water, granulated sugar, and instant dry yeast. Let sit 5-10 minutes until foamy. Stir in olive oil. Add flour and salt; mix until a shaggy dough forms. Knead on a lightly floured surface 7-10 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise 60-90 minutes until doubled.

Make the red sauce
In a saucepan over medium heat, combine crushed tomatoes, tomato sauce, garlic powder, onion powder, oregano, basil, sugar, and salt. Drizzle in olive oil. Simmer 15-20 minutes, stirring occasionally. Taste and adjust seasoning; set aside.

Prepare the smoked meats
If using leftovers, gently reheat brisket and pulled pork until hot through. For the hot links, slice into 1/4-inch rounds and sauté in a skillet over medium heat until browned and fat rendered. Drain any excess grease.

Spread a thin layer of the red sauce over the par-baked crust. Sprinkle mozzarella and provolone cheese evenly across. Scatter smoked brisket and pulled pork over the cheese, then arrange hot link slices on top. Finish with grated parmesan.

Return to oven and bake 10-12 minutes, until the crust is crisp and cheese is melted and bubbling. For extra browning, broil 1-2 minutes at the end. Remove, let rest 5 minutes, then slice and serve.
