Fries preparation and frying

    Fill a heavy pot or fryer with vegetable oil to a depth of at least 3 inches (about 4 cups). Preheat to 350°F (175°C).

    Prepare the potatoes

    Scrub the potatoes clean. If desired, peel. Cut into evenly sized sticks about 1/4 inch thick and 3-4 inches long to ensure uniform cooking.

    Place cut fries in a bowl of cold water and soak for 30-60 minutes to remove surface starch for crisper fries.

    Dry and starch

    Drain the potatoes and pat thoroughly dry with clean towels. Toss with the cornstarch until evenly coated to help crisp the exterior.

    Season

    In a light bowl, mix salt, paprika, garlic powder, and black pepper. After cornstarch coating, toss fries in the seasoned mix until evenly seasoned.

    Working in batches, fry the potatoes in the hot oil at 350°F (175°C) for 4-5 minutes until pale and flexible. Do not crowd the pot to maintain oil temperature.

    Rest and heat up

    With a slotted spoon, transfer fries to a rack or paper towels to drain. Allow oil to return to 375-400°F (190-205°C) for the second fry.

    Second fry and crisp

    Fry the fries again in batches for 2-4 minutes until deep golden and crisp on the outside. Maintain oil temperature around 375-400°F (190-205°C).

    Drain, season, and serve

    Transfer fries to fresh paper towels, blot excess oil, sprinkle a pinch of additional salt if desired, and serve immediately with your favorite dipping sauces.
