Scrub the potatoes clean. If desired, peel. Cut into evenly sized sticks about 1/4 inch thick and 3-4 inches long to ensure uniform cooking.

Place cut fries in a bowl of cold water and soak for 30-60 minutes to remove surface starch for crisper fries.

With a slotted spoon, transfer fries to a rack or paper towels to drain. Allow oil to return to 375-400°F (190-205°C) for the second fry.

Fry the fries again in batches for 2-4 minutes until deep golden and crisp on the outside. Maintain oil temperature around 375-400°F (190-205°C).
