Preheat and dry
Position a rack in the middle of the oven and preheat to 425°F (220°C). Pat the chicken half dry with paper towels to ensure crisp skin.

In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, salt, pepper, paprika, and thyme.

Gently loosen the skin from the breast and thighs and rub a portion of the paste under the skin and over the exterior. If using, drizzle melted butter over the skin.
