Prepare the rub
In a bowl, whisk together brown sugar, smoked paprika, garlic powder, onion powder, ground cumin, salt, black pepper, and cayenne. Remove the membrane from the back of the pork spare ribs for better rub penetration.

Prep the ribs
Pat the 2 racks of pork spare ribs dry with paper towels and place on a rack set over a sheet pan.

Apply rub
Generously rub the mixture over both sides of the ribs, pressing to adhere. Let sit at room temperature for 15-20 minutes to hydrate the spices.

Make glaze
Whisk together the apple cider vinegar, ketchup, soy sauce, and honey until smooth to create a glossy glaze.

Marinate and prep for cooking
Tightly wrap the ribs in heavy-duty foil with a splash of glaze to trap steam and flavor. If time allows, refrigerate for 60 minutes.

Roast until tender
Preheat oven to 300F (150C). Place ribs on a rack over a sheet pan and bake, covered, for 2.5 to 3 hours until very tender.

Finish glaze
Unwrap, brush the ribs with some of the glaze, and bake uncovered for an additional 15-20 minutes to caramelize.
Serve

Remove ribs from the oven and let rest 10 minutes. Slice between bones and serve with extra glaze on the side.
