Dough preparation and rise

Combine dry ingredients
In a large bowl, whisk together 2.5 cups all-purpose flour, 2.25 tsp instant dry yeast, 1 tsp fine sugar, and 1 tsp salt.

Add liquids
Stir in 1 cup warm water and 1 tablespoon olive oil until a shaggy dough forms.

Knead
Turn the dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.

First rise
Oil a clean bowl, place dough inside, cover, and let rise in a warm spot for 60-90 minutes until doubled.
Assemble and bake

Preheat oven and shape dough
Preheat oven to 475F (246C). Punch down the risen dough and roll into a 12-inch circle on a floured surface.

Sauce the crust
Spread 0.5 cup BBQ sauce over the surface, leaving a 1/2-inch border for the crust.

Cheese layer
Scatter 2 cups shredded mozzarella cheese evenly over the sauce.

Add vegetables
Top with 1 small red onion slices and 1 medium red bell pepper, evenly distributed.

Add pork
Top with 2 cups smoked pulled pork, distributing evenly.

Bake
Bake in the hot oven for 12-15 minutes, until crust is golden and cheese is melted and bubbly.
