Preheat and prepare dish
Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish with cooking spray or butter.
Cook pasta

Bring a large pot of salted water to a boil. Add elbow macaroni and cook until al dente, about 6-7 minutes. Drain and set aside.
Make cheese sauce

Stir in flour and cook for about 1 minute to make a light roux.

Slowly whisk in milk, cooking and stirring until the mixture is smooth and slightly thickened, about 4-6 minutes.

Add shredded cheddar and cream cheese; stir until melted and smooth. Season with salt and pepper.

Stir in grated Parmesan until well combined.
Finish and bake

Stir in BBQ sauce and shredded chicken into the cheese sauce until well coated.

Combine the saucy mixture with the cooked macaroni. Transfer to the prepared baking dish.

In a small bowl, toss breadcrumbs with melted butter (optional) and sprinkle over the top.

Bake for 15-20 minutes, until the top is bubbly and golden. If using extra breadcrumbs, broil for 1-2 minutes to brown.
