    Prepare the pot

    Place a large, heavy-bottom pot with a tight-fitting lid on the stove over medium-high heat. Add the oil and let it heat until shimmering.

    Add kernels and sugar

    Add the popcorn kernels to the hot oil. Immediately sprinkle the granulated sugar and salt on top. Give a quick gentle stir to distribute the sugar over the kernels.

    Pop and coat

    Cover the pot with the lid, leaving a small vent for steam. Shake the pot gently every 15–20 seconds to prevent scorching and to coat the kernels with the sugar as they pop.

    Finish popping

    Continue until the pops slow to about 2–3 seconds apart. Remove the pot from heat but keep the lid on for another 30 seconds to finish popping.

    Season the popcorn

    Pour the popcorn into a large mixing bowl. Drizzle the melted butter over the warm popcorn and, if using, the vanilla extract. Toss vigorously to coat evenly.

    Cool and store

    Spread the kettle corn on a sheet or large plate to cool slightly and set the coating. Once cooled, transfer to an airtight bag or container for storage (best within 2–3 days).
