    Preheat oven to 425°F (220°C). Rinse the Russet potatoes and cut them into 1/4-inch-thick fries. Place the cut fries in a bowl of cold water to remove surface starch, about 5–10 minutes.

    Drain the potatoes and rinse again. Soak the fries in clean cold water for 10 minutes to further remove starch, then drain and pat completely dry with clean towels or a salad spinner to ensure crispiness.

    Toss the dry potatoes with olive oil, salt, and black pepper until evenly coated. Spread the fries in a single layer on a rimmed baking sheet, ensuring they are not overcrowded for maximum crispness.
