Prepare flavor blend
In a small bowl, whisk together cinnamon, allspice, coriander, and cloves to create a unified spice blend.

Dissolve sugar
In a medium saucepan over medium heat, combine granulated sugar and water. Stir until the sugar dissolves completely and the mixture becomes a clear syrup.

Add flavors and acids
Stir in vanilla extract, cherry extract, almond extract, orange juice, and lemon juice into the syrup.

Infuse spices
Add the spice blend to the saucepan. Reduce heat to low and simmer for 8-10 minutes to meld flavors, stirring occasionally.

Color and adjust
If using caramel color, whisk in 2 tablespoons gradually until the syrup reaches a deep amber color. Taste and adjust acidity with more lemon or orange juice if desired.

Strain and cool
Remove from heat and strain the syrup through a fine-mesh sieve to remove solids. Let the concentrate cool to room temperature, then transfer to a clean bottle.
