Whisk dry ingredients
In a large bowl, whisk together flour, yeast, sugar, and salt.

Combine wet and form dough
Stir in warm water and olive oil until a shaggy dough forms.

Knead and smooth
Turn the dough onto a floured surface and knead for 6–8 minutes until smooth and elastic.

First rise
Lightly oil a clean bowl, place dough inside, cover, and let rise in a warm spot for about 60 minutes, or until doubled in size.

Whisk sauce
In a bowl, whisk together mayonnaise, sour cream, lemon juice, garlic powder, salt, sugar, and black pepper until smooth.

Rest sauce
Cover and refrigerate the sauce while dough rises to let flavors meld.

Cook slowly, stirring occasionally, for 25–30 minutes until onions are deeply golden and sweet.
Assemble and Bake

Preheat oven
Place a rack in the center of the oven and preheat to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

Roll dough
Punch down the risen dough, roll out to about a 12-inch circle, and transfer to a lightly oiled baking sheet or parchment-lined peel.

Sauce and cheese
Spread about 1/2 cup of creamy white BBQ sauce over the dough. Top with shredded mozzarella cheese.

Scatter sliced smoked brisket, caramelized onions, and Ortega chiles over the cheese.

Bake for 12–15 minutes, until the crust is golden and the cheese is melted and bubbly.
