    Prepare honey syrup

    If you don't have honey syrup prepared, make it first. Combine equal parts honey and hot water (for example, 1/4 cup honey + 1/4 cup hot water). Stir until honey is fully dissolved and cool before using. Yield: more than needed; store refrigerated up to 2 weeks.

    Chill a coupe or rocks glass by filling it with ice and setting it aside while you build the cocktail.

    Add bourbon (2 oz), peach liqueur (1 oz), fresh lemon juice (3/4 oz), honey syrup (1/2 oz), and orange bitters (2 dashes) to a cocktail shaker.

    If using egg white for a silky texture, add 1/2 of an egg white to the shaker now.

    Dry shake (shake without ice) vigorously for 10–15 seconds if you used egg white. This helps emulsify and create a froth.

    Add 6 ice cubes to the shaker and shake again vigorously for 12–15 seconds to chill and dilute the drink properly.

    Dump the ice from your chilled glass. Fine-strain the cocktail into the chilled coupe (or strain over fresh ice into a rocks glass if you prefer it on the rocks). Use a fine mesh strainer if egg white was used to remove any small solids and ice shards.

Garnish

    Garnish with a fresh peach slice or wheel perched on the rim and, if desired, a lemon twist expressed over the cocktail and dropped in.
