Chill glass
Place a rocks glass or short tumbler in the freezer or fill it with ice and set aside to chill while you prepare the cocktail.

Combine ingredients
In a cocktail shaker add the bourbon, fresh lime juice, maple syrup, orange bitters, and the optional smoked chili or Angostura dash.

Add ice and shake
Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 10–15 seconds until the outside of the shaker is frosty and the liquid is well chilled and slightly diluted.

Prepare serving glass
If you chilled the glass with ice, discard the ice now. Optionally, rim the edge lightly with smoked sea salt: wet the rim with the lime wheel and dip the rim into the smoked sea salt, tapping off any excess.

Strain and serve
Add fresh ice to the chilled rocks glass (about 1/2 cup). Double-strain the shaken cocktail into the glass using a Hawthorne strainer and, if desired, a fine mesh strainer to remove tiny shards of ice and pulp.

Garnish
Express the oils of the lime twist over the drink by holding the twist skin-side down over the glass and giving it a quick pinch, then drop the twist or float the lime wheel on top. Serve immediately.

Notes
Adjust the maple syrup to taste — use 3/4 oz for sweeter, 1/4 oz for drier. For a smoky note, swap 1/4 oz mezcal for up to 0.5 oz of the bourbon or use the smoked chili bitters.
