Prepare Meats & Cheese

Cook bacon
In a large skillet over medium heat, add the 6 slices of thick-cut smoked bacon in a single layer. Cook until edges are crisp and centers are still slightly chewy, about 6–8 minutes, flipping once. Transfer bacon to a plate lined with paper towel and blot excess fat. Reserve 1 teaspoon of bacon fat in the skillet and discard the rest (or save for another use).

Warm other meats
Heat the reserved 1 teaspoon bacon fat in the skillet over medium-low. Quickly warm the 4 slices of honey-baked ham and 4 slices of prosciutto (or soppressata) for 30–45 seconds per side just until they take on a little color and become more fragrant — do not overcook. Transfer to a plate.

Place 4 slices of aged cheddar on a plate; if you prefer melted cheese in the sandwich, you will toast the assembled sandwich in the next section to melt them.
Prepare Bread & Spread

Slice the ciabatta roll horizontally and lightly brush the cut interior with 1 teaspoon olive oil. Spread 1 tablespoon softened butter evenly on the bottom half of the roll. On the top half, spread 1 teaspoon Dijon mustard, then the 1 teaspoon whole grain mustard on top of that. Spread 1 tablespoon apple butter (or fig jam) over the mustard to create the sweet-savory contrast.
Assemble Sandwich

On the bottom buttered half of the roll, layer the ingredients in this order: 2 slices warmed ham (overlapping), 2 slices warmed prosciutto (or soppressata), 3 cooked bacon slices (stacked), and 2 slices of cheddar. Add the remaining warmed ham and prosciutto slices on top of the cheese if space allows, or fold to fit. Scatter 2 tablespoons pickled red onion and 1/2 cup baby arugula over the top meats. Finish with the remaining 3 slices of bacon if you prefer all 6 bacon slices in the sandwich (omit extras to fit). Season lightly with freshly ground black pepper to taste.
Toast & Finish

Heat the same skillet over medium-low (wipe out any burnt bits). Put the assembled sandwich in the skillet, press gently with a spatula, and cover with a lid or a piece of foil to trap heat. Toast 2–3 minutes per side until the bread is golden and the cheddar melts (flip carefully). Alternatively, place the sandwich in a 375°F (190°C) oven for 6–8 minutes until warmed through and cheese is melted.

Remove sandwich from heat, let rest 1 minute, then slice in half. Serve immediately while warm.
