Form and Season
Place the ground beef in a bowl. Add 0.5 tsp kosher salt and 0.25 tsp black pepper. Gently mix just until combined; do not overwork. Divide into two equal portions and form one flat patty about 4 inches (about 1/2 inch thick). Make a small dimple in the center of the patty with your thumb to prevent doming while cooking.

Cook
Heat 1 tsp vegetable oil in a heavy skillet or cast-iron pan over medium-high heat until shimmering. Add the beef patty and cook undisturbed 3 to 4 minutes until well-browned on one side. Flip and cook 2 to 3 minutes more for medium (adjust 1–2 minutes for desired doneness). If using cheese, place slice on patty in the last minute and cover pan to melt.

Form and Season
Place ground pork in a separate bowl. Add 0.5 tsp salt, 0.25 tsp black pepper, 0.25 tsp ground sage and 0.125 tsp ground fennel (if using). Mix gently until seasoning is evenly distributed. Divide into two equal portions and form one flat patty roughly the same diameter and thickness as the beef patty.

Cook
In the same skillet (wipe it briefly if charred bits are too dark) or a second skillet, heat 1 tsp vegetable oil over medium heat. Add the pork sausage patty and cook 4 to 5 minutes per side, pressing gently with a spatula so it browns evenly and cooks through (internal temperature 160°F / 71°C). Remove from pan and keep warm.

Assemble Sandwich
On the bottom bun layer lettuce and tomato slices. Place the cooked beef patty on the bottom bun, then the pork sausage patty on top (or stack in your preferred order). Add onion rings and pickles. Spread mayonnaise on the top bun and ketchup and mustard on the bottom bun (or as desired). Top with the toasted bun.

Serve
Serve immediately while hot. Optionally cut in half and serve with fries or a simple salad.
