    Preheat and prepare pans

    Preheat the oven to 230°C (450°F). Line two large baking sheets with parchment paper or lightly oil them. Place a wire rack on one sheet if you have one to allow extra airflow (optional).

    Wash and cut potatoes

    Scrub the sweet potatoes well. Trim the ends. Cut each potato into 1/4–1/2 inch (6–12 mm) thick sticks: slice the potato lengthwise into 1/4–1/2 inch slabs, then stack and cut into sticks. Try to keep pieces as uniform as possible for even cooking.

    Place the cut fries in a large bowl of cold water and soak for 15–30 minutes to remove some starch; this helps them crisp. After soaking, drain and pat the fries very dry with clean kitchen towels or paper towels.

    In a small bowl, whisk together the olive oil and cornstarch until smooth. Add smoked paprika, garlic powder, ground cumin, kosher salt, and black pepper; mix to form a thin paste.

    Return the dried fries to a dry large bowl. Pour the oil-spice mixture over the fries and toss thoroughly so each fry is coated evenly. If using one sheet with a rack, spread fries on the rack in a single layer. If using two sheets, arrange fries in a single layer with space between pieces so air can circulate; overcrowding causes steaming instead of crisping.

Baking

    Bake at 230°C (450°F) for 12 minutes. Remove the pans, flip and rotate fries between sheets (move the ones on the top rack to the bottom and vice versa) to promote even browning.

    Return to the oven and bake an additional 8–12 minutes, or until edges are browned and fries are crisp to your liking. Total bake time will be about 20–24 minutes depending on thickness and oven. Watch closely in the last 5 minutes to avoid burning.

Finish & Serve

    Remove fries from the oven and immediately season with an extra pinch of salt if desired. If using, sprinkle chopped parsley and grated Parmesan while fries are hot so the cheese softens slightly. Serve with lime wedges on the side for squeezing or your favorite dipping sauce (aioli, ketchup, or spicy mayo).
