Slice and separate
Peel the onions and trim the stem ends. Slice into 1/4- to 1/2-inch thick rings. Gently separate rings into individual circles, discarding the small center pieces or saving them for another use.

Transfer rings to a bowl of cold water and let sit for 10 minutes to help reduce sharpness and firm up the rings, then drain and pat completely dry with paper towels. Moisture will cause oil sputtering and reduce batter adherence.

In a medium mixing bowl, whisk together 1 cup all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1/2 tsp sugar, 1 tsp kosher salt, 1/2 tsp black pepper, and 1/2 tsp paprika until evenly combined.

In a separate bowl, whisk the cold egg. Pour in 1 cup cold sparkling water (or cold beer) and whisk until just combined. For a lighter, crispier batter, keep the liquid very cold; you can place the bowl over another bowl with ice briefly.

Make a well in the dry ingredients and pour the wet mixture in. Stir gently with a whisk or fork until just combined; a few small lumps are fine. Do not overmix — overworking the batter will make it heavy. The batter should coat the back of a spoon but still be relatively thin; adjust with a tablespoon of water or flour if needed.

Set up a dredging station: one shallow bowl with 1/2 cup flour for dredging, one bowl with the prepared batter, and (optionally) a bowl with 1/2 cup panko for extra crunch. Heat oil in a deep-sided heavy pot or deep fryer to 350°F (175°C). Use a thermometer to maintain temperature.

Working in small batches (4–6 rings at a time depending on pot size), lightly dredge each dry onion ring in the 1/2 cup flour, shaking off excess. Dip fully into the batter, allowing excess to drip back into the bowl, then (optional) coat with panko for extra crispness. Carefully lower into hot oil using a spider or slotted spoon, being careful not to crowd the pot.

Fry rings for 2.5–3.5 minutes, turning once if necessary, until golden brown and crisp. Maintain oil temperature around 350°F; if it drops too low the rings will absorb oil, if too high they will burn before cooking through.

Using a slotted spoon, transfer fried rings to a wire rack set over a baking sheet or paper towels to drain. Immediately sprinkle with 1 tsp kosher salt and 1/4 tsp freshly ground black pepper while still hot so it adheres. Keep finished rings in a warm oven (200°F / 95°C) in a single layer while you finish remaining batches to maintain crispness.
