    Preheat grill or pan

    Preheat an outdoor grill to medium-high (around 375–425°F / 190–220°C) or place a cast-iron skillet or grill pan over medium-high heat on the stovetop. Lightly oil the grates or pan.

    If the sausages are whole and thick, pierce each once or twice with a fork to prevent bursting. Alternatively, slice a few shallow diagonal slits along each sausage to encourage even cooking and render fat.

    Grill the sausages for 8–12 minutes, turning every 2–3 minutes so they brown evenly and heat through. Internal temperature should reach 160–165°F (71–74°C) for pre-cooked smoked kielbasa and 165°F (74°C) for fresh sausages. If using a stovetop skillet, cook similarly, turning to brown all sides.

    In the last 1–2 minutes of cooking, place buns cut-side down on the grill or pan to toast lightly until golden and warm (about 30–90 seconds). If using butter or mayonnaise, spread it on the cut sides before toasting for extra flavor and browning.

Peppers & Onions

    While the sausages heat, prepare the vegetables. Peel the onion, cut it in half, then slice into 1/4-inch (6 mm) half-moons. Core and seed the red and green bell peppers, then slice into 1/4-inch strips. Mince the garlic.

    Heat a large skillet over medium-high heat. Add 2 tablespoons olive oil and 1 tablespoon butter. When the butter stops foaming, add the sliced onions and peppers in a single layer if possible. Let them cook untouched for 1–2 minutes to get some browning, then stir or toss.

    Cook the peppers and onions for 8–12 minutes, stirring every 1–2 minutes, until they are softened and beginning to caramelize. Add the minced garlic in the last 1–2 minutes so it becomes fragrant but not burnt.

    Season the peppers and onions with 1 teaspoon salt, 1 teaspoon black pepper, and 1 teaspoon sugar (optional). Taste and adjust seasoning. Keep the mixture warm until the sausages and buns are ready.

Assembly & Serving

    Open each toasted bun and place one grilled Polish sausage inside. Spoon a generous portion of the warm peppers and onions over the sausage.

    Add condiments to taste: a teaspoon each of yellow mustard and ketchup per sandwich, pickles or hot relish if desired. If using sport peppers or hot pepper relish, place on top for an authentic spicy bite.

    Serve immediately while hot. Provide extra napkins—these sandwiches are juicy and flavorful.
