Method
Prepare peaches
Blanch and peel (optional)
Bring a medium pot of water to a boil. Score a small X on the bottom of each peach. Prepare an ice bath (bowl of ice water). Drop peaches into boiling water for 30–45 seconds until skins begin to loosen, then transfer immediately to the ice bath. When cool, peel skins away starting at the scored X.
Halve the peaches, remove the pits, and slice each half into 6–8 wedges (depending on size). Place slices in a bowl and toss gently with the lemon juice to prevent browning and brighten flavor.
If peaches are very firm or not fully ripe, you can macerate them: sprinkle 1 tablespoon of sugar over the slices, toss, and let sit 15–20 minutes at room temperature; drain any excess juice before assembling.
Make sweetened cream
Chill a medium mixing bowl and beaters in the freezer for 5–10 minutes (optional but helps cream whip better).
Pour 1.5 cups cold heavy cream into the chilled bowl. Add 3 tablespoons granulated sugar, 1 teaspoon vanilla extract, and a pinch of fine sea salt.
Using an electric mixer on medium-high speed (or a whisk by hand), whip the cream until soft peaks form — peaks should hold shape but still be glossy, about 2–4 minutes with a mixer. Taste and adjust sweetness, adding up to 1 additional tablespoon sugar if desired.
If you prefer a looser cream (creamy pourable sauce), whip only to soft peaks. For a thicker dollop, whip to firm peaks but do not overbeat or you will start making butter.
Assemble and garnish
Divide the peach slices among 4 dessert bowls or serving glasses.
Spoon or dollop the whipped sweetened cream over the peaches, distributing evenly.
Sprinkle toasted almonds or chopped pecans over each serving if using, and tuck 1–2 mint leaves on top for color.
If desired, finish each serving with a light drizzle of honey (about 1/4–1/2 teaspoon per serving) for extra shine and sweetness.
Serve immediately. If you need to hold for up to 1 hour, keep chilled in the refrigerator; whipped cream will soften over time.
