Whiskey Lemonade Base

Juice lemons and make simple syrup (if needed)
If you don't have bottled lemon juice, squeeze fresh lemons to yield 3 fl oz (about 2 medium lemons). To make simple syrup: combine equal parts granulated sugar and water (for this recipe 1.5 fl oz each — ~3 tbsp sugar and 3 tbsp water), warm gently until sugar dissolves, then cool.

In a cocktail shaker or large mixing glass, combine 6 fl oz Irish whiskey, 3 fl oz fresh lemon juice, and 1.5 fl oz cooled simple syrup.

Add a handful of ice to the shaker (about 3/4 to 1 cup) and shake vigorously for 10–15 seconds until well chilled (or stir briefly if you prefer less dilution).

Fill a highball glass with about 1 cup of fresh ice.

Strain the shaken whiskey-lemonade mixture into the prepared glass over ice.

Top with approximately 4 fl oz club soda to add effervescence. Gently stir once or twice to combine.

Garnish with a lemon wheel or wedge on the rim and a mint sprig if using.

Serve immediately. Adjust sweetness by adding up to 0.5 fl oz more simple syrup or more club soda to lengthen the drink.
