    Prepare watermelon

    Trim rind from watermelon and cut into 1-inch (2.5 cm) cubes. Aim for uniform cubes so they thread and present nicely. Measure out about 4 cups of cubes (approximately 1/4 of a small watermelon or one medium).

    Prepare feta

    Cut the block of firm feta into roughly 1-inch cubes to match the watermelon size. Pat feta cubes gently on paper towel if they are very wet so they hold on the skewer.

    Assemble skewers

    Take a wooden skewer and thread in this order: one watermelon cube, one basil leaf (folded if large), one feta cube, and finish with another watermelon cube. Repeat until you have 12 skewers (adjust number of skewers if you change cube size). Place finished skewers on a serving platter. If using longer skewers, trim to size or use two cubes per skewer as preferred.

Dressing & garnish

    Make dressing

    In a small bowl whisk together 2 tablespoons olive oil, 1 tablespoon fresh lime juice and 1 teaspoon honey or agave (if using) until combined.

    Season

    Stir in 1 teaspoon sea salt and 1 teaspoon freshly ground black pepper to the dressing; taste and adjust. Keep in mind feta is salty, so you may reduce salt to 1/2 teaspoon if desired.

    Finish skewers

    Lightly drizzle the dressing over the arranged skewers just before serving (about 1 tablespoon per 6 skewers). Sprinkle the toasted sesame seeds (optional) over the skewers for a nutty crunch and a little visual contrast.

    Serve

    Serve immediately at room temperature or chilled. If making up to 1 hour ahead, wait to dress the skewers until 10 minutes before serving to avoid sogginess. Leftovers (undressed) can be stored in an airtight container in the refrigerator for up to 24 hours.
