Pomegranate Simple Syrup (optional)

    Make syrup

    Combine 1/2 cup pomegranate juice and 1/2 cup granulated sugar in a small saucepan. Bring to a gentle simmer over medium-low heat, stirring until the sugar fully dissolves (about 3–4 minutes). Remove from heat and let cool to room temperature. Transfer to a clean jar and refrigerate. Yields about 3/4 cup. Use 1/2 oz per cocktail.

Prepare glass

    If you prefer a rim, rub a grapefruit wedge around the glass rim then dip into salt or Tajín to coat. Fill a highball or Collins glass with cubed ice and set aside.

Mix cocktail

    Shake

    In a cocktail shaker, add 2 oz blanco tequila, 2 oz fresh grapefruit juice, 1/2 oz fresh lime juice, 1/2 oz pomegranate syrup, and a handful of ice. Shake vigorously for about 10–12 seconds until well chilled.

    Strain and top

    Strain the shaken mixture into the prepared ice-filled glass. Top with 2 oz club soda and gently stir once to combine.

    Garnish and serve: Garnish with a grapefruit wedge or wheel and sprinkle the pomegranate arils on top if using. Serve immediately with a straw or stirrer.
