Cocktail

Method

Cocktail

  1. 1

Prepare the glass (optional sugared rim)

If you want a sugared rim, rub a lemon wedge around the martini glass rim, then dip the rim into a small plate of coarse or superfine sugar. Set the glass in the freezer or aside to chill while you mix the cocktail.

  2. 2

    Combine ingredients

In a cocktail shaker, add 0.5 tablespoon fig jam, 1/2 oz fresh lemon juice, 1 oz apple cider, 0.25 tsp simple syrup (only if needed to balance sweetness), and 1 dash Angostura bitters. Use a small spoon or muddler to vigorously mix the fig jam with the juices in the bottom of the shaker until it is as smooth as possible.

  3. 3

    Add spirits and ice

Add 2.5 oz vodka to the shaker. Fill the shaker with about 6 ice cubes (enough to nearly fill).

  4. 4

    Shake

Secure the shaker lid and shake vigorously for 12–18 seconds. Aim for a good chill and slight dilution so the fig jam fully integrates and the mixture becomes silky.

  5. 5

    Double strain and serve

Strain the cocktail through a fine mesh strainer (or Hawthorne plus fine strainer) into the chilled martini glass to remove any jam solids and ice shards. This produces a smooth silky texture.

Garnish & Finish

  1. 6

Garnish with a thin fresh fig slice floated on the surface and a lemon twist expressed over the drink (twist oils over the cocktail, then drop or rest on the rim). If using a dried fig, skewer it on a pick and rest across the glass. Serve immediately.
