Method

Drink

  1. 1

    Chill glass and ingredients

If possible, chill the wine/large stemmed glass in the freezer for 5–10 minutes and ensure Prosecco and club soda are well chilled.

  2. 2

    Add ice

Fill the chilled wine or large stemmed glass about three-quarters full with ice cubes (approximately 1 cup).

  3. 3

    Pour Aperol

Measure and pour 3 oz Aperol over the ice.

  4. 4

    Add Prosecco

Slowly pour 2 oz chilled Prosecco into the glass. Pour gently to preserve bubbles and to layer the drink.

  5. 5

    Top with club soda

Add 1 oz chilled club soda to the top of the glass. Adjust up to 1.5 oz if you prefer a slightly lighter spritz.

  6. 6

    Stir gently

Give the drink one or two gentle short stirs with a bar spoon to combine ingredients without losing effervescence.

  7. 7

    Garnish and serve

Garnish with 1 fresh orange slice placed on the rim or dropped into the glass. Serve immediately while cold and fizzy.
