Prepare the Setup

Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and pepper.

Bread the Bocconcini

Take a bocconcini ball, coat it in flour, dip it into the beaten eggs, and then roll it in the breadcrumb mixture until fully coated. Repeat for all mozzarella balls.

Heat the Oil

In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Mozzarella Balls

Carefully drop the breaded mozzarella balls into the hot oil in batches. Fry for 2-3 minutes or until golden brown. Use a slotted spoon to remove them and place them on paper towels to drain excess oil.

For the Red Pepper Marinara Sauce

Sauté the Garlic

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add Tomatoes and Peppers

Stir in the crushed tomatoes and chopped roasted red bell pepper. Mix well.

Season the Sauce

Add dried oregano, salt, and black pepper to the sauce. Let it simmer for about 10-15 minutes, stirring occasionally until slightly thickened.

Finish the Sauce

Remove from heat and garnish with fresh chopped basil before serving.
