Method
Prepare Ingredients
In a small bowl, whisk together the 6 egg whites and 2 tablespoons low-fat milk until slightly frothy. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Set aside.
Cook Vegetables
Sauté onion, garlic, and mushrooms
Heat 1 teaspoon olive oil in a nonstick skillet over medium heat. Add the finely diced onion and sauté for 2–3 minutes until softened and translucent. Add the minced garlic and sliced wild mushrooms and continue to cook 3–4 minutes, stirring occasionally, until mushrooms release moisture and begin to brown.
Wilt spinach and add roasted pepper
Add the 1.5 cups fresh baby spinach to the pan and cook 1–2 minutes until wilted. Stir in the 1/2 cup roasted red bell pepper strips and warm through, about 30–60 seconds. Transfer the vegetable mixture to a bowl and keep warm. Wipe the pan lightly with a paper towel if needed.
Cook Omelet
Cook egg whites
Return the nonstick skillet to medium-low heat and add a light spray of cooking oil or a quick wipe of the remaining olive oil. Pour in the seasoned egg white mixture, tilting the pan so it spreads evenly. Let the eggs set undisturbed for 1–2 minutes, then use a spatula to gently lift edges and allow uncooked egg to flow underneath. Continue until the top is mostly set but still slightly moist, about 1–2 more minutes.
Add fillings and cheese
Evenly distribute the warm vegetable filling over one half of the omelet. Sprinkle the 1/2 cup shredded low-fat mozzarella over the vegetables. Allow the cheese to melt slightly for 30–45 seconds.
Fold and finish
Carefully fold the empty half of the omelet over the filled half using a spatula. Cook 30–60 seconds more to finish warming through and ensure cheese is melted. Slide the omelet onto a plate.
Serve
Garnish with 1 tablespoon chopped chives or parsley. Serve immediately. Optionally pair with a slice of whole-grain toast or fresh fruit for a complete healthy meal.
