Heat and flush machine

Turn on the espresso machine and allow it to reach operating temperature (this usually takes 10–20 minutes depending on the machine). Run about 100 ml of filtered water through the group head into the drip tray or cup to warm and flush the group head and portafilter.

Preheat cup and portafilter

Warm the serving cup by rinsing it with hot water from the machine. Insert an empty portafilter and run hot water through it to warm the metal. Discard the water.

Dose and grind

Weigh beans

Weigh 18 g of freshly roasted espresso beans. Use a digital scale for accuracy.

Grind to espresso

Grind the 18 g of beans to a fine espresso grind (slightly finer than table salt, but not powder). Aim for a grind that produces a 25–30 second extraction for 40 ml output.

Distribute and tamp

Place the ground coffee into the preheated portafilter basket. Level or use a distribution technique to remove large voids. Using a tamper, apply firm, even pressure (approximately 20–30 lbs / 9–13 kg) and polish the puck with a slight twist to create a flat, sealed surface. Wipe any loose grounds from the rim.

Lock in and start extraction

Lock the portafilter into the group head and start the extraction immediately. Place the warmed cup under the spouts.

Monitor brew

Extract 40 ml of espresso in 25–30 seconds. The flow should start as a thin stream, become steady like warm honey, and finish with a slightly lighter colored crema. If extraction is much faster, adjust to a finer grind next time; if much slower, make the grind coarser.

Serve

Once the extraction reaches 40 ml, stop the shot. Serve immediately in the warmed cup. Offer the optional 30 ml of cold water on the side and sugar to taste.

Cleanup

Purge the group head briefly, knock out the used puck, and rinse the portafilter. Wipe the steam wand if used and maintain routine machine cleaning after service.
