Method
Oatmeal Base
Cook oats
In a small saucepan combine 0.75 cups rolled oats, 1.5 cups water, 0.25 cups unsweetened milk and 0.25 tsp salt. Bring to a gentle boil over medium-high heat, then reduce to a simmer. Stir frequently to prevent sticking and cook 5–7 minutes until the oats are tender and most of the liquid is absorbed. For creamier oatmeal cook an extra minute and stir vigorously.
If the porridge is too thick, stir in up to 1 tablespoon additional milk or water to reach your desired consistency. Remove from heat.
Peanut Butter Layer
Swirl peanut butter
While the oats are hot, stir in 2 tablespoons creamy peanut butter until fully incorporated and melted into the porridge. If you want a touch of sweetness, stir in 1 teaspoon maple syrup or honey. Taste and adjust salt or sweetness as desired.
Fruit Toppings
Prepare fruit
Slice half a banana into thin rounds. Quarter and slice the strawberries if needed so pieces are bite-sized. Rinse and drain 0.25 cup blueberries. Set aside.
Spoon the peanut-butter oatmeal into a serving bowl. Arrange the banana slices, quartered strawberries and blueberries on top in separate clusters or scattered, according to preference.
Crunch & Finish
Add almonds and spices
Sprinkle 1 tablespoon sliced roasted almonds over the fruit for crunch. Optionally dust with 1/8 tsp ground cinnamon for warmth.
If desired, add a small drizzle (about 1 tablespoon) of extra milk over the bowl for loosened texture. Serve immediately while warm.
