Prepare protein (if not already cooked)

If using raw sausage or chorizo: heat a medium skillet over medium heat, add the raw sausage or chorizo (8 oz) and cook, breaking into crumbles, until browned and cooked through, about 6–8 minutes. Drain excess fat on paper towels. If using bacon, cook strips in a skillet or oven until crisp, then chop into bite-size pieces. Keep warm.

Beat eggs

In a medium bowl whisk together 6 large eggs, 3 tablespoons whole milk, 3/4 teaspoon salt (from the total salt listed) and 1/2 teaspoon black pepper until combined and slightly frothy.

Scramble eggs

Heat a nonstick skillet over medium-low heat and add 1 tablespoon unsalted butter. Once melted and slightly foamy, pour in the egg mixture. Allow eggs to sit undisturbed for 10–15 seconds, then gently push cooked edges toward the center with a spatula, letting uncooked egg flow to the pan. Continue folding slowly until eggs are softly set but still moist, about 3–4 minutes total. Remove from heat. Stir in 3/4 cup of the shredded aged cheddar (reserve remaining for assembly). Taste and adjust seasoning with remaining salt and pepper if needed.

Warm tortillas

Warm 4 large flour tortillas one at a time in a dry skillet over medium heat for 15–20 seconds per side, or wrap in a damp paper towel and microwave for 20–30 seconds. Keep tortillas covered with a clean towel to stay pliable.

Assemble burritos

Lay a warm tortilla flat. Spoon approximately 1/4 of the scrambled eggs into the center, top with 2 ounces (about 2 tablespoons) of the cooked protein, and sprinkle about 2 tablespoons of remaining shredded cheddar. Fold the sides in, then roll tightly from the bottom to form a burrito. Repeat with remaining tortillas and filling. If you prefer a sealed burrito, place seam-side down in a skillet over medium heat for 1–2 minutes per side to lightly crisp and seal.

Hash Browns

Prepare potatoes

If using fresh potatoes: grate one large russet and place in a clean kitchen towel. Squeeze out as much moisture as possible. If using thawed frozen shredded hash browns, first squeeze out any excess moisture in a towel.

Cook hash browns

Heat a large nonstick or cast-iron skillet over medium-high heat. Add 2 tablespoons vegetable oil and 1 tablespoon butter. When hot and foaming, spread the 3 cups shredded potatoes in an even layer. Press down lightly with a spatula and let cook without stirring until the bottom is deeply golden and crisp, about 6–8 minutes. Flip in sections (or flip the whole pancake if confident) and cook until the other side is golden, another 5–7 minutes. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Transfer to a plate and keep warm.

To Serve

Place a burrito on each plate alongside a generous portion of hot hash browns. Spoon about 2 tablespoons salsa per burrito (total 1/2 cup for 4 servings) on the side or over the burrito. Offer hot sauce, chopped cilantro, and lime wedges for garnish and extra flavor.

Serve immediately while eggs are warm and tortillas are pliable. Leftover burritos can be wrapped in foil and refrigerated for up to 3 days; reheat in a 350°F (175°C) oven for 15–20 minutes or microwave covered until heated through.
