Off dry/lightly sweet, with cherry and apricot undertones

Place a flute or coupe in the freezer for 5–10 minutes or fill with ice water while preparing ingredients to ensure the cocktail stays chilled.

Chill

In a mixing glass filled halfway with ice, combine the chilled dry rosé (4 oz), apricot brandy (0.5 oz), simple syrup (0.25 oz), and maraschino cherry syrup or cherry liqueur (0.25 oz if using). Stir gently with a bar spoon for about 10–15 seconds to chill and slightly dilute the mixture.

Taste the base: if you prefer slightly sweeter, add an additional 0.25 oz simple syrup or 0.25 oz cherry liqueur. If it feels too sweet, add 0.25–0.5 oz more chilled dry rosé to balance.

Discard ice/water from the chilled flute or coupe. Strain the mixed rosé/apricot base into the glass, leaving roughly 1/3 of the volume empty for the sparkling wine.

Top gently with chilled sparkling wine or Prosecco (2 oz). Pour slowly down the side of the glass to preserve bubbles and prevent overflow.

Thread the maraschino cherry onto a cocktail pick and rest it in the glass, or drop the cherry into the drink. Express a citrus twist (lemon or orange) over the surface by twisting skin away from the drink to release oils, then drop or rest the twist on the rim.

Serve immediately while sparkling. Provide a small spoon if the cherry is dropped in, and note that the cocktail is off-dry with cherry and apricot undertones.
