Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes

After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.

Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can test the oil by dropping in a small piece of potato; if it sizzles, the oil is ready.

Fry the Potatoes

Carefully add the dried potato strips to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy.

Drain and Season

Use a slotted spoon to remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, season with salt and black pepper to taste.

Serve

Serve the fries hot as a delicious side dish or snack.
