Make the mix

In a pitcher, combine tomato juice, vodka, prepared horseradish, Worcestershire sauce, hot sauce, lemon juice, lime juice, sea salt, black pepper, celery salt and smoked paprika. Whisk until blended. Taste and add up to 1 teaspoon maple syrup if you want a faint sweet note to complement the brunch toppings.

Chill and marry flavors

Cover the pitcher and refrigerate for at least 20 minutes, or up to 2 hours, to let flavors meld. Stir again before serving.

Rim & Glass Garnishes

Prepare the rim mixture by mixing kosher or celery salt and cracked black pepper on a shallow plate. Rub a lemon or lime wedge around the glass rim, then dip the rim into the salt-pepper mixture to coat evenly. Place the glass in the freezer for 5 minutes to set the rim if desired.

Fill each prepared glass with 1 cup of ice (about 4 cubes large or crushed to preference).

Savory Brunch Skewers / Toppings

Cook bacon

Preheat oven to 400°F (204°C). Lay bacon strips on a foil-lined baking sheet in a single layer. Bake 15–20 minutes until crisp to your liking. Remove and drain on paper towels. Reserve 2 strips per cocktail for skewers.

Prepare chicken fingers

If using frozen cook-and-serve chicken fingers, bake or fry according to package instructions until internal temperature reaches 165°F (74°C) and they are crisp. Keep warm. Halve each finger if needed so pieces fit on a skewer.

Warm pancake and waffle

Warm the mini Belgian waffles and pancakes in a toaster or oven (350°F / 175°C for 5–8 minutes) until heated through and slightly crisp. Brush with a little butter and drizzle with maple syrup. Cut to size so each piece will sit on a cocktail skewer without toppling.

Assemble skewers

Thread onto cocktail picks in this order for balance: olive, folded bacon strip, pancake piece, waffle piece, chicken finger piece, pickle spear (if using). For very large pieces, use the longer skewer/toothpick and secure items snugly. Repeat to make four full skewers (or 1–2 skewers per cocktail depending on size).

Final assembly & Serve

Pour 6 fl oz of the chilled Bloody Mary mix into each prepared ice-filled glass (this recipe yields roughly four 6-oz cocktails).

Carefully slide one assembled brunch skewer across the top of each glass. Add 2 pitted green olives on a short pick and rest inside the glass or impale them on the skewer as extra garnish.

Top each cocktail with a dill pickle spear and a wedge of lemon or lime on the rim. Finish with a light sprinkle of fresh cracked black pepper and a few microgreens or parsley on the skewer for color.

Optional: For an extra maple note, drizzle about 1 teaspoon of maple syrup over the waffle/pancake on the skewer just before serving.
