Pancakes (buckwheat)

Mix dry ingredients
In a medium bowl whisk together 1 cup buckwheat flour, 1/4 cup all-purpose flour, 1 teaspoon baking powder and 1/4 teaspoon fine salt until evenly distributed.

Combine wet ingredients
In a separate bowl or large measuring cup combine 1 cup almond milk, 4 egg whites, 1 tablespoon olive oil (reserve a little for the pan), and 1/2 teaspoon vanilla extract. Whisk until slightly frothy and uniform.

Make batter
Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix — a few small lumps are fine. If batter feels too thick, add up to 2 tablespoons more milk to reach a pourable but thick pancake batter consistency.

Rest batter
Let the batter rest 5 minutes while you preheat the pan; this hydrates the buckwheat and yields lighter pancakes.

Cook pancakes
Heat a nonstick skillet or griddle over medium (about 350°F / 175°C). Lightly brush with remaining olive oil or spray. For each pancake, pour 1/4 cup batter onto the skillet. Cook until edges set and small bubbles form on the surface, about 2–3 minutes. Flip and cook 1–2 minutes more until golden and cooked through. Make 6–8 small pancakes (serves 1–2). Keep pancakes warm on a plate covered loosely with foil.

Cook chicken sausages
While batter rests or pancakes cook, heat a medium nonstick skillet over medium. Add 1 teaspoon neutral oil or spray. Place 2 chicken breakfast sausages in the skillet. Cook 4–6 minutes, turning occasionally, until browned on all sides and internal temperature reaches 165°F (74°C). Remove and rest for 1–2 minutes, then slice in half lengthwise or into rounds if desired.

Serve with optional fresh berries or sliced banana and 1–2 tablespoons honey or maple syrup on the side for drizzling. Enjoy immediately while warm.
