Method
Strawberry Sauce
- 1
Combine chopped strawberries, 1 tablespoon sugar, 1 teaspoon lemon juice, and 1 teaspoon water in a small saucepan over medium heat.
- 2
Bring to a gentle simmer, stirring occasionally, and cook for 5–7 minutes until berries break down and sauce thickens slightly.
- 3
Remove from heat and mash any large pieces with a fork or spoon for a smoother sauce. Let cool to room temperature. Reserve 2 tablespoons for drizzle and keep remaining warm or chilled for shaking.
Rim Decoration
- 4
Place vanilla frosting in a shallow bowl. In a separate shallow bowl combine crushed graham crackers and sprinkles.
- 5
- 6
Immediately dip the frosted rim into the graham-sprinkle mixture, pressing gently so crumbs adhere. Set the glass upright to allow frosting to set slightly (about 2–3 minutes).
Shake Base
- 7
In a blender add 1 cup hulled fresh strawberries and 2 tablespoons of the cooled strawberry sauce (reserve the rest for drizzling).
- 8
Add 2 cups vanilla ice cream, 1 cup whole milk, 2 oz softened cream cheese, 1 tablespoon sugar, and 1 teaspoon vanilla extract to the blender. If you prefer a thicker shake, add up to 1 cup ice.
- 9
Blend on high for 30–60 seconds until smooth and creamy. Stop and scrape down the sides if needed, then pulse to fully incorporate the cream cheese and fruit.
- 10
- 11
If you want visible sauce streaks in the glass, drizzle 1 tablespoon of strawberry sauce inside the prepared glass, rotating to create vertical streaks before pouring.
- 12
Pour the milkshake into the prepared glass, leaving about 1 inch of headspace for toppings.
Garnish & Finish
- 13
Top the shake with about 3/4 cup whipped cream, piling it into an attractive swirl.
- 14
Place the mini slice of cheesecake so it sits partly on the whipped cream and partly on the rim (or on a skewer if preferred for stability).
- 15
Arrange 2 sliced strawberries alongside the cheesecake slice and place 1 whole strawberry on the rim notch for accent.
- 16
Drizzle the reserved 2 tablespoons of strawberry sauce over the whipped cream and cheesecake slice.
- 17
Optional: sprinkle a few extra graham crumbs or a light dusting of powdered sugar over the top.
- 18
Serve immediately with a wide straw and a long spoon.
