Soften and scoop
If using store-bought ice cream, let it sit at room temperature for 3β5 minutes so it softens slightly. Transfer 3 generous scoops (about 3 scoops) to a small bowl. Add 2 tablespoons milk and stir gently until the texture is spoonable but not melted β slightly softened so you can shape a scoop.

Make a quick puree (optional)
If you prefer a more intensely strawberry base, mash the softened ice cream with 1 tablespoon strawberry syrup or puree until streaked and evenly colored. If ice cream is already strongly strawberry flavored, you can skip additional puree and simply use the ice cream as-is.

Prepare glass and optional sugared rim
Chill a flute or coupe glass briefly. If using a sugared rim, rub the rim with a cut fresh strawberry, then dip the rim into 1 teaspoon vanilla sugar or granulated sugar to coat lightly.

Assemble the mimosa
Place one rounded scoop (about 1 scoop) of the softened strawberry ice cream into the chilled glass. Drizzle 1 tablespoon strawberry syrup or puree over the ice cream for extra color and flavor. Pour 2 ounces vanilla vodka gently over the ice cream so it begins to mingle but not completely melt it. Slowly top with 4 ounces chilled champagne or dry sparkling wine poured down the side of the glass to preserve bubbles and keep some foam. The ice cream will float and create a creamy froth.

Adjust sweetness and strength
Taste carefully (small sip) and, if you prefer less alcohol, add 0.5 ounce more champagne and omit a bit of vodka next time. If you want it sweeter, stir gently to distribute the strawberry syrup or add a drop more.

Top and garnish
Add 2 tablespoons of sweetened whipped cream on top of the foam (pipe or spoon). Slide a fresh strawberry onto the rim or halve it and place on the top. Serve immediately with a small spoon and straw so the guest can stir or eat the ice cream while sipping.

Serving note
This cocktail is best consumed right away while sparkling wine is still effervescent and the ice cream is cold but scoopable.
