Toast buns
Split the brioche buns and set aside. Heat a large nonstick skillet over medium heat. Add 1/2 tablespoon of butter to the skillet and once melted, place the cut sides of the buns down. Toast until golden-brown, about 1–2 minutes, watching carefully so they don't burn. Remove and keep warm.

Prepare pork roll
Increase heat to medium-high and add 1 teaspoon neutral oil to the skillet. Lay the pork roll slices in a single layer (overlap slightly if needed). Cook until edges are browned and slices are heated through, about 1–2 minutes per side. If the pork roll is thick, press lightly with a spatula and cook an additional 30–60 seconds per side. Remove pork roll to a plate and keep warm in a low oven (or cover with foil).

Make scrambled eggs
In a bowl, crack the eggs and add the milk, 1/4 tsp salt and 1/8 tsp black pepper. Whisk until well combined and slightly frothy. Wipe the skillet clean with a paper towel, then return to medium-low heat and add the remaining 1 1/2 tablespoons butter. Once the butter is melted but not browned, pour in the eggs. Let them sit undisturbed for about 10–15 seconds, then gently stir with a silicone spatula, pushing eggs from the edges toward the center. Continue to fold every 10–15 seconds until the eggs are mostly set but still glossy and slightly creamy, about 1–2 minutes total. Season with remaining salt and pepper to taste. Remove from heat — residual heat will finish them.

Assemble sandwich
If using, spread 1 teaspoon mayonnaise on the bottom bun and 1/2 teaspoon mustard on the top bun. Place one slice of American cheese on the bottom bun, then layer half of the scrambled eggs over the cheese. Top eggs with half the cooked pork roll slices. Repeat with second sandwich: cheese, eggs, pork roll. Place the toasted top bun over each assembled sandwich. If you prefer melted cheese, return assembled sandwiches to the warm skillet for 30–45 seconds with a lid to encourage melting, or microwave briefly for 10–15 seconds.

Finish and serve
Cut sandwiches in half if desired and serve immediately while warm.
