Prep potatoes
Wash and peel potatoes if desired. Cut into 1/4- to 1/2-inch thick matchstick fries. Rinse cut fries under cold water until water runs clear to remove excess starch. Pat completely dry with kitchen towels.

Season dry mix
In a small bowl combine 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, 1/2 tsp paprika and 1/2 tsp dried oregano. Set aside.

Fry potatoes
Heat 2 cups vegetable oil in a deep skillet or Dutch oven to 325°F (160°C). Fry potatoes in batches for 3–4 minutes until soft but not browned. Transfer to a paper towel–lined tray. Increase oil temperature to 375°F (190°C). Fry potatoes again in batches for 2–3 minutes until golden and crisp. Drain on paper towels and immediately toss with the prepared seasoning mix so they coat evenly.

If you prefer baking: toss dried cut fries with 2 tbs oil and the seasoning mix; spread in a single layer on a baking sheet and bake in a 425°F (220°C) oven for 25–30 minutes, flipping halfway, until crisp.
Tomato Sauce

Cook aromatics
Heat 1 tablespoon olive oil in a small saucepan over medium heat. Add the finely chopped onion and cook, stirring occasionally, until soft and translucent, about 4–5 minutes. Add the minced garlic and cook 30–45 seconds more until fragrant.

Simmer sauce
Stir in 1 cup crushed tomatoes and 1 tablespoon tomato paste. Add 1/2 tsp dried basil, 1/2 tsp dried oregano, 1/4 tsp sugar, 1/2 tsp salt and 1/4 tsp black pepper. Bring to a low simmer, reduce heat to low, and cook gently for 10–12 minutes to meld flavors and thicken slightly. Taste and adjust seasoning.

Preheat oven
Preheat your broiler or oven to 425°F (220°C). If using broiler, position rack about 6 inches from the heat.

Plate fries in an ovenproof skillet or on a baking sheet in a single layer or slightly piled (depending on portion). Spoon warm tomato sauce evenly over the fries, using about half to three-quarters of the sauce depending on preference. Sprinkle shredded mozzarella evenly over the sauced fries, then grate or sprinkle the optional Parmesan.

Melt cheese
Bake in the 425°F oven for 5–8 minutes until cheese is melted and bubbling, or place under the broiler 1–3 minutes, watching carefully to prevent burning. Remove when cheese is melted and just starting to brown.

Garnish & serve
Finish with chopped fresh basil and a light sprinkle of red pepper flakes if using. Serve immediately while hot and melty.
