Prepare Dry Ingredients

Sift and combine
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and fine salt until evenly distributed.

Stir in the finely ground pistachios until evenly mixed into the dry ingredients. Set the bowl aside.
Prepare Wet Ingredients

In a separate medium bowl or large measuring cup, whisk the buttermilk, eggs, melted cooled butter, and vanilla extract together until homogeneous.

Make the Batter

Create a well in the center of the dry ingredients and pour in the wet mixture. Using a spatula, fold gently until the flour is just incorporated. The batter should be slightly lumpy — do not overmix or the pancakes will be tough.

If the batter looks very thick, whisk in 1–3 tablespoons of additional buttermilk to reach a pourable but thick consistency (should pour slowly from a spoon). Let the batter rest for 5 minutes to hydrate the ground pistachios and allow leaveners to activate.
Cook the Pancakes

Heat a nonstick griddle or large skillet over medium heat. Brush with a thin layer of neutral oil or melted butter. To test readiness, sprinkle a few drops of water — they should sizzle and evaporate.

For each pancake, pour about 1/4 cup of batter onto the hot griddle, leaving space between pancakes. If desired, immediately sprinkle a pinch of the coarsely crushed pistachios on top of each pancake so they adhere while cooking.

Cook until bubbles form on the surface and edges look set, about 2 to 3 minutes. Flip and cook the second side until golden and cooked through, another 1.5 to 2 minutes. Adjust heat as necessary to prevent excessive browning.
