    Preheat and dry ingredients

    Preheat a nonstick griddle or large skillet over medium heat (about 350°F/175°C). In a large bowl whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.

    Wet ingredients

    In a separate medium bowl whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth and homogeneous.

    Combine batter

    Make a well in the dry ingredients and pour in the wet mixture. Stir gently with a spatula or wooden spoon until just combined—small lumps are fine. Do not overmix. Let the batter rest for 5 minutes; this relaxes the gluten and yields tender pancakes.

Cooking Pancakes

    Prepare pan

    Lightly grease the preheated griddle or skillet with 1/2 to 1 teaspoon of oil or butter. Wipe off excess with a paper towel so the surface is evenly coated but not greasy.

    Cook pancakes

    Using a 1/4-cup measure, pour batter onto the hot surface leaving space between pancakes. Cook until bubbles appear across the surface and edges look set, about 2 to 3 minutes. Flip and cook the second side until golden brown and cooked through, about 1 to 2 minutes more. Repeat, adding more oil or butter as needed, to make about 10 to 12 pancakes (depending on size). Keep finished pancakes warm on a plate in a low oven (200°F/95°C) or covered with foil.

Toppings & Assembly

    Prepare fruit

    While pancakes cook, slice bananas and hull and slice strawberries. If using toasted hazelnuts, toast them in a dry skillet over medium heat for 3 to 5 minutes, shaking frequently, until fragrant and lightly browned; chop roughly and set aside.

    Warm Nutella

    Spoon Nutella into a microwave-safe bowl and warm for 15 to 25 seconds, stirring after 15 seconds until it reaches a pourable consistency. Alternatively, place the jar in a bowl of hot water for a few minutes and stir.

    Assemble pancakes

    Stack 2–3 pancakes per serving on plates. Spread a thin layer of warm Nutella between layers if desired, or spoon warm Nutella over the top of the stack. Arrange sliced bananas and strawberries on top and around the pancakes.

    Finish and serve

    Sprinkle chopped toasted hazelnuts over the top for crunch and dust with powdered sugar if using. Serve with maple syrup on the side for people who want extra sweetness. Serve immediately while pancakes and Nutella are warm.
